Favourite Christmas Foods

FOOD!! My favourite part of life. I come from quite a large family of food lovers! All our family parties revolve around the food and Christmas time is the one time of year you can eat whatever you want and no one can judge you!!

Santa Sweets!

One of the best parts about Christmas night was cracking into the Santa Sweets (or Lemons as more commonly known). We only ever got these at Christmas, to be honest I don’t think you can get them any other time of year! My favourites are the Iced Caramels and the fruity ones.

Roses

Roses, roses, roses, the classic Christmas sweets! I’m the weirdo of my family who loves the strawberry dream ones that everyone else in my family hates so whenever I go to visit my Granny I get to take all my favourite sweets with me! 🙂

Jelly Tots

Okay, jelly tots aren’t a Christmas food but we always get the tube of them in our stockings every year so to me they are Christmas!!

Ham & Turkey Sambos

Yes, Christmas dinner is a wonderful thing but I look forward to the ham, turkey and tayto sambos at the end of Christmas day sitting down by the fire watching a Disney movie.

Stuffing

My favourite favouite part of Christmas dinner is the stuffing. None of this bread stuffing nonsense I use my Granny’s infamous recipe which includes sausage meat (cause why wouldn’t you stuff meat with more meat?) and always goes down a treat when I make it for Thanksgiving in my brothers.

Christmas Cake

My breakfast in December generally consist of cake, cake and more cake. Once we collect the Christmas cake from my Grandmother myself and dad usually some how manage to have it gone by Christmas day. It’s kind of nearly becoming a tradition/challenge to do it every year now!

Christmas Pudding

Yet another one of Granny’s recipes is her wonderful Christmas Pudding. This one though we manage to save until after Christmas. We usually do a big New Years day dinner with my dads brother and his family so we save the Christmas Pud til then cause we usually steal some in Granny’s house on Christmas day on Dessert stop number 1!

Quick and Easy Egg Muffins

I posted an Instagram story during the week of these and got a few questions as to what they are and how to make them so I though I might as well throw together a bit of a blog post.

These egg muffins are a lifesaver for me in the morning times. I’m one of those people who really struggles to get out of bed in the morning and usually leave myself with the minimum amount of time to get ready and out the door for work so I don’t really have the time to eat a breakfast before I boot it out the door in the morning so meal prep has become a huge part of my life lately and these egg muffins are the perfect healthy breakfast for those busy weekday mornings.

All you need is: 

Ingredients

4 Eggs

1/2 Red or Yellow Pepper

1-2 Scallions

6 Bacon Medallions

A handful of Spinach Leaves

Salt & Pepper

Frylight

Utensils

Silicon Muffin Molds

A Muffin Tin

Method

  1. Preheat your oven to 180 degrees Celsius.
  2. Dice the veg and bacon to relatively the same size and begin by frying the bacon off in a small pan with some Frylight.
  3. Once the bacon is starting to get crispy add the peppers to the pan to cook.
  4. While that’s cooking beat up 4 eggs with some salt and pepper.
  5. Add the scallions to the pan and allow them to cook for a few minutes.
  6. Line your muffin tin with the silicon cases and add some spinach to each case.
  7. Fill the case with the bacon, peppers and scallion mix.
  8. Divide the beaten eggs between as many cases as you can (I usually get 6 egg muffins from this mixture) and pop in the oven for 20 minutes.
  9. Once cooked remove from the cases and allow to cool on a wire tray.

It’s as simple as that. I find these so handy to throw in the oven while you’re cooking something else and they’re ready for the next mornings breakfast (or can be frozen). I just pop them in the microwave for about 3 minutes once I get to work.

There you go, a healthy quick and easy breakfast you can have prepared ahead for those days you just need 5 more minutes in bed.
